THULL’S makes pickles from various types of vegetables, preserved in beautiful cider or wine vinegar. Fine condiments such as chili jam, mustard and wine jelly and probiotic soft drinks such as water kefir and kombucha.
About the Maker
Simone van Thull, namesake of THULL’S, loves food and cooking. And preferably cooking from scratch, with a preference for simple, humble ingredients. Due to her background as a catering and restaurant manager, she has spent a lot of time in professional kitchens. This personal fire was fueled by the talented chefs she worked with. From an early age she liked to cook a lot. Later, catering was added where she discovered the world of canning techniques and fermentation. She got to work herself and was quickly captivated by the flavors and structures this yielded. This is how THULL’S was born.
The Products
THULL’S cuisine is mainly about preserving, but also fermented products. In short, making food more sustainable, preserving seasonal products at the right time. Formerly a necessity, now a great way to naturally preserve products at their peak of flavor and abundance for later use. A transfer of the full flavor of a product to another time. Contemporary convenience food, without colorings and preservatives. Pickles are delicious as a side dish. With dinner, on a sandwich, on a snack board or straight from the jar!
Thull’s Deli
In recent years, Simone van Thull came to the conclusion that she wanted to be even more involved with food than she already was. There was also a growing need to be as self-sufficient as possible in what you eat. All this led to the step to create a place where everything is about food. A food shop in the broadest sense of the word, but specializing in fermentation and preserving. THULL’S opened its doors in Amsterdam East at the end of June 2015. In an emerging neighborhood with many different nationalities and a varied population, a place close to her heart!
