The Stillery is a craft distillery that produces local, organic drinks in their own CO2-neutral distillery in the port of Amsterdam. They combine age-old craftsmanship with modern techniques and offer a wide range of products such as gin, jenever, whiskey and innovative ready-to-drink cocktails.
About the Makers
The Stillery was founded by Pascal Peeters and Robin Karels, whose shared passion for distilling led them to learn the trade through experimentation and self-study. Pascal, with a background in molecular biology, brought the scientific side, while Robin was responsible for the creative direction of the company. In 2011 they started their adventure, which led to the creation of their own distillery. “We wanted to combine the old craft with a fresh look at how things can be done better and more consciously,” says Robin.
Production Process
The Stillery distills all spirits in-house in their own facility. The distillery contains stainless steel tanks, copper distilling equipment and oak barrels in which whisky, rum and gin are aged. Their gin is made with local flowers and seaweed from the North Sea, which gives their products a unique Dutch touch.
Sustainability
At The Stillery they try to make every step in the process as environmentally friendly as possible. “Of course we consume something, but our journey is to continuously become more aware and reduce our impact,” said Pascal. All ingredients are organic and they work with Trees for the Future to plant a tree for every liter of alcohol they produce. They also continue to innovate, such as replacing regular bottle corks with natural cork.

The Stillery focuses on the catering and retail industry, offering their products in premium restaurants and shops. Private individuals can also purchase their products via the webshop.
